- 6 large (about 1.6kg) pontiac potatoes, washed, peeled, chopped
- 40g butter
- 125ml (1/2 cup) thickened cream
- 125ml (1/2 cup) milk
- Salt & freshly ground white pepper

- Step 1Place potatoes in a medium saucepan and cover with plenty of cold water. Cover with a lid and bring to the boil over high heat. Uncover and gently boil for 15 minutes or until tender.
- Step 2Drain potatoes and return to pan. Use a potato masher or fork to mash until smooth. Add the butter, cream and milk, and use a wooden spoon to beat until combined. Pass mash through a fine sieve into a clean saucepan and stir over low heat for 2 minutes or until heated
